Roasting
Roasting is both an art and a science.
pgPblcRost.jpg The goal is to create some of the finest coffee available anywhere. To be called Callao Coffee, every bag must meet our exacting standards for quality and consistency. That pursuit begins with the bean.

We constantly evaluate an incredibly wide range of coffees from around the globe. We know that flavor is created on the tree and there is nothing we can do to improve the flavor of the bean once it has been harvested. So picking the right beans, from the right origin is a mission-critical part of our work.

When we discover the rare coffee that might be a good fit for our partners and customers, we do sample roasts and put them through our critical taste testing process. Only those coffees with the best aroma and flavor emerge and move on to the next step in the process. Once we select a choice coffee, we run a battery of trials to determine the roast profile that best compliments the coffee.

For the coffee lover to experience the difference in the various origins and the conditions under which the coffee was grown, each coffee needs to be roasted in a way that will best bring out all of its natural flavor. The darker a coffee is roasted, the more the roasting process can compliment the flavor of the beans.

To watch our award-winning Roastmaster, Paul Galvin work the roaster is like watching a passionate artist attack a canvas. It is art and science. His goal is to roast the beans slowly enough to allow the caramelization of the sugars and oils, but not so slowly that it would risk baking or flattening the taste of the beans.

Every batch of coffee is checked and tasted to ensure it is flavorful and roasted consistently to the roast profile designed for it. Samples of every batch are preserved and the profile recorded for future reference.

As soon as they are cool, the beans are packed into sealed bags with one way valves to lock in and preserve the freshness of the roast.
